Vegan Peach Cobbler

I make a lot of fruit cobblers, because I love picking fruit and am not ambitious enough to make an actual pie.

This is my latest favorite, with everything baked right inside and vegan ice cream sitting on top.

Peach cobbling was an all day affair a few Sundays ago in Connecticut with my niece, Kaitlin. We picked peaches at the orchards before the sun got too hot, stopped for lunch on the way back, and spent the afternoon on my parents porch. I wish this was an everyday thing.

I knew the miracle of agriculture was lost on Kaitlin when she mentioned how cool it would be if A) there we're machines that picked the peaches for you and B) you could pay people to do that for you. But I think she had fun anyway.

Vegan Peach Cobbler

Ingredients

  • 4ripe peaches
  • 4 tablespoons light brown sugar
  • 1 cup granola
  • 8 tablespoons vegan butter, cut into 16 pieces
  • 1pint vanilla vegan ice cream (optional)

Directions

  • Halve and pit the peaches, scooping out any of the surrounding fruit around the pit
  • Fill each halved peach with 2 pieces of vegan butter, 1/2 tablespoon of brown sugar and 2 Tbs. granola (The amount totally depends on the size of your peaches, and I omitted the vegan butter on time, and it was still perfect)
  • Bake for about 15 minutes on 400 degrees until the peach and granola starts to brown.
  • Top with vegan ice cream and a mint leaf, and serve
