Strawberry Chia Pudding

Good morning! I hope you're all doing fantastically super today! I know I'm feeling quite well!

Yesterday we we're planning on having a date day in Seattle.Unfortunately,our trip to the laundromat turned out to be a bit more complicated than we thought it would be. By the time we finished with the laundry, we decided it was too late to do the Seattle thing, so we hit up the Sizzler salad bar instead. We had a great time nonetheless, and had another lazy night in watching movies.

This morning was spent watching tv in bed, until I got up to get ready for work and prepare myself some food to take with me. I've been trying to prepare more of my own food now that Keenan is working, so that he doesn't feel any unfair pressure, especially when he's tired. This takes a little extra planning ahead, as well as sometimes getting up a little bit earlier to get everything done. Our opposing schedules is definitely an obstacle sometimes, but it's something we're doing everything we can to make sure that it's as easy as possible on both of us.

Today, my chosen brunch is a Starbucks iced vente soy chai

and strawberry chia pudding.

Strawberry Chia Pudding

Ingredients (1 serving)

1.5 cups almond milk

5 frozen strawberries

1/2 scoop vanilla protein powder

2 scoops chia seeds


1. In a blender combine the first three ingredients. Blend until smooth.

2. Pour into a separate container. Add the chia seeds and stir until they are consistent throughout the mixture.

3. Allow to sit for at least 15 minutes, or until the mixture forms a gel.

This ended up being a great combination. Chia seeds are also a great source of omega-3 fatty acids, plus they are very hydrating, because they absorb so much water. I've been feeling a bit dehydrated lately, mostly from being sick, so last night I made myself a chia pudding before bed. This morning I woke up feeling more hydrated than I have in days. Those little dudes really work! Chia seeds are also a great smoothie mix-in, but chia pudding is an awesome way to mix it up!
